How to Brew and Enjoy Jin Jun Mei Tea?

To brew and enjoy Jin Jun Mei tea correctly, there are three main methods: Eastern, Western, and Cold. The Eastern and Western methods involve using hot water, while the Cold method uses room temperature water.

One of the remarkable advantages of Jin Jun Mei tea is that the water temperature does not affect its rich composition and beneficial properties. It is not necessary to add honey, lemon, or other additives to fully experience the tea’s flavor and aroma.

Eastern Method

Brewing Jin Jun Mei tea properly is crucial for its health benefits. Follow these steps:

  1. Pour ½ teaspoon of tea into 200 ml of hot water, making sure the temperature does not exceed +90-95 °C.
  2. Immediately discard this water to cleanse the tea leaves from dust and particles, allowing the full flavor and aroma to emerge.
  3. Pour hot water over the tea leaves again and let it steep for 15-20 seconds.

Note: For subsequent infusions, you can adjust the steeping time to your preference. This step is crucial for obtaining a well-balanced tea that is neither too bitter nor too strong.

Western Method

Using any teapot available in your kitchen—porcelain, clay, or glass—follow these steps:

  1. Pour hot water over the tea buds and promptly discard it.
  2. Pour hot water over the tea again and let it steep for 17-18 seconds.
  3. For each subsequent brewing, increase the infusion time by 10 seconds.

Cold Method

For this method, use room temperature water. Use 2 grams of tea buds for 170 ml of water. Place the tea in the refrigerator for 6-8 hours or overnight for a more vibrant and flavorful infusion. Adding a few ice cubes is optional.

The Origin of Jin Jun Mei

One of the legends states that while walking on the mountain slopes of Wuyishan with his guests, a tea master stumbled upon a wild bush with blossoming buds that gave off a unique aroma. He picked a handful of these buds and took them home, where he transformed them into the world-famous Golden Eyebrow Tea.

Another legend attributes the creation of Jin Jun Mei to the tea master Liang Jun De. He improved and modified the technological process of producing the classic Chinese tea variety, Lapsang Souchong, by eliminating the stage of smoking on pine branches.

The third theory suggests that all the legends about the tea’s creation are nothing more than a marketing ploy. According to its proponents, the market needed a new, expensive, and prestigious tea, which became the Golden Eyebrows variety developed by a team of experienced specialists.

Production Process

Jin Jun Mei is made exclusively from young tea buds harvested by hand in the spring from the mountainsides of Wuyishan in Fujian Province. Its production is a complicated, laborious, and painstaking process, which involves collecting at least 130-140,000 tender buds to produce 1 kg of raw material. The main stages of production include harvesting the young buds, curing, crushing, fermenting, and drying.
